[Vegetable Fried Rice]

Ingredients
- 2 tablespoons vegetable oil
- ½ medium onion finely chopped
- 2 celery ribs finely chopped
- ⅓ cup carrot grated
- ½ medium red bell pepper finely chopped
- 12 snow peas sliced
- 1 garlic clove crushed
- 2 teaspoons fresh ginger chopped
- 1 cups cold cooked rice
- 1 14oz. can cut baby corn
- 2 tablespoons soy sauce
- ¼ cup water
- freshly ground black pepper to taste
- 3 green onions finely chopped
- 1 cup bean sprouts
- ½ cup frozen peas
Directions
1. Heat the oil in wok or large skillet set over medium-high heat. When it is hot, add the onion, celery, carrot and bell pepper and stir-fry for 2 minutes. Add the snow peas, garlic and ginger, and stir-fry 1 minute more. Mix in the rice, com, soy sauce and water and stirfry 3 to 4 minutes, or until the rice is well heated through. |
2. Stir in the remaining ingredients, cook 1 to 2 minutes more, and then serve. |
