1. Heat the oil in wok or large skillet set over medium-high heat. When it is hot, add the onion, celery, carrot and bell pepper and stir-fry for 2 minutes. Add the snow peas, garlic and ginger, and stir-fry 1 minute more. Mix in the rice, com, soy sauce and water and stirfry 3 to 4 minutes, or until the rice is well heated through.
2. Stir in the remaining ingredients, cook 1 to 2 minutes more, and then serve.
