Directions

1. Cook vermicelli according to packaged; drain and toss with 1 Tbsp oil.
2. Heat remaining oil in large skillet over medium heat.
3. Add ginger, garlic and pepper flakes; stir fry 30 seconds.
4. Add bok choy and bell pepper; stir fry 2 minutes.
5. Add broth and soy sauce; bring to a simmer. Add green onions; simmer until vegetables are tender (about 2 min.)
6. Stir in vermicelli and Canadian bacon; heat through.
7. Transfer to plates and top with peanuts.
