[Szechuan-Style Lo Mein]

Ingredients
- 8 ounces Vermicelli, Break in half
- 2 Tablespoon Sesame oil
- 2 Tsp Fresh ginger, minched
- 1 cloves garlic, minched
- ½ tsp red pepper flakes, crushed
- 2 cups bok choy, sliced
- 1 red pepper, cut into short thin slices
- 1 cup chicken broth
- ¼ cup soy sauce
- 6 ounces Canadian bacon slices, cut into strips
- 2 green onions, cut diagonally into 3/4 inch pieces
- ¼ cup peanuts, optional
Directions
1. Cook vermicelli according to packaged; drain and toss with 1 Tbsp oil. |
2. Heat remaining oil in large skillet over medium heat. |
3. Add ginger, garlic and pepper flakes; stir fry 30 seconds. |
4. Add bok choy and bell pepper; stir fry 2 minutes. |
5. Add broth and soy sauce; bring to a simmer. Add green onions; simmer until vegetables are tender (about 2 min.) |
6. Stir in vermicelli and Canadian bacon; heat through. |
7. Transfer to plates and top with peanuts. |
