[Summer Greens with Nectarines and Goat Cheese]

Ingredients
- 1 ½ tablespoons balsamic vinegar 1 tsp Dijon mustard
- 2 teaspoons honey
- 2 teaspoons chopped fresh tarragon
- ¼ cup olive oil
- 8 cups mixed salad greens
- 2 ripe nectarines, halved, pitted and thinly sliced
- 125 grams soft goat cheese, pull into small nuggets
- ⅓ cup pecan halves
- salt and freshly ground black pepper to taste
Directions
1. Place the first six ingredients in a salad bowl and whisk to combine. Add the salad greens and toss to coat. |
2. Divide the salad greens among four plates. 'Ibp with the nectarines, cheese and pecans and serve. |
