1. Preheat the oven to 325 F. Peel and thinly slice the vegetables. In a 6-inch round cake pan greased with olive oil, make a layer of rutabaga slices. Spread a thin layer of ricotta cheese over top and sprinkle lightly with salt and pepper. Place a layer of beets on top of the ricotta layer. Continue placing a layer of each vegetable into the cake pan, alternating with a thin layer of ricotta and lightly seasoning each layer.
