[Root Vegetable Torte]

Ingredients
- ¼ rutabaga
- 1 Small Sweet Potato
- ½ onion
- 1 medium beet
- 1 medium potato
- 2 carrots
- 1 cup ricotta cheese
- salt and pepper, to taste
Directions
1. Preheat the oven to 325 F. Peel and thinly slice the vegetables. In a 6-inch round cake pan greased with olive oil, make a layer of rutabaga slices. Spread a thin layer of ricotta cheese over top and sprinkle lightly with salt and pepper. Place a layer of beets on top of the ricotta layer. Continue placing a layer of each vegetable into the cake pan, alternating with a thin layer of ricotta and lightly seasoning each layer. |
