[Onion Spinach and Ricotta Frittata]

Ingredients
- 6 large eggs
- 1 cup ricotta cheese
- ¾ cup caramelized onions
- 1 cup spinach drained wilted
- ½ cup pecorino cheese
- salt and pepper
Directions
Heat 1 tablespoon olive oil in 10-inch ovenproof skillet over medium-high heat; pour in egg mixture. Sprinkle with 1/2 cup leftover shaved pecorino cheese; bake at 350°F until golden and firm, about 18 minutes. |
