2. Scrub potatoes well, but do not peel. Cut potatoes into 1/4’s and then place in a pot. Cover with cold water. Boil until just tender, drain well, and then place in a bowl. Mix in the remaining ingredients. Cool the salad to room temperature. Cover and chill well before serving.

Notes

uUse 1/2 mayo and cut back on mustard
