[Nugget Potato Salad with Grainy Dijon and Chives]

Ingredients
- 2 lb. nugget potatoes
- 2 large hard-boiled eggs, chopped
- ⅓ cup light mayonnaise
- 2 Tbsp. white wine vinegar
- 1 celery rib, finely chopped
- 2 Tbsp. grainy Dijon mustard
- 2 Tbsp. chopped fresh chives
- Salt and freshly cracked black pepper to taste
Directions
1. Method |
2. Scrub potatoes well, but do not peel. Cut potatoes into 1/4’s and then place in a pot. Cover with cold water. Boil until just tender, drain well, and then place in a bowl. Mix in the remaining ingredients. Cool the salad to room temperature. Cover and chill well before serving. |
