[French Onion Soup]

Brandy can also be used
Ingredients
- 3 Tablespoons Butter
- 3 Large onions sliced
- ¾ Cup Red Wine
- 1 Tablespoon Flour
- 4½ Cups Beef Bouillon/Broth
- 2 Tsp Worcestershire Sauce To taste
- pepper to taste
- 6 slices french bread
- 8 oz. Swiss cheese
Directions
1. In a saucepan, melt butter or margarine. Add sliced onions and cook over low heat stirring occasionally until caramelized, 30 minutes or more. |
2. Add red wine and simmer until the wine is gone and onions drying out. 5 - 10 minutes. A small amount of Brandy can also be used, but I would not use both brandy and red wine - if using brandy add it at the time adding Worcestershire sauce.. |
3. Sprinkle the flower over onions and cook briefly. 5 minutes. |
4. Add the beef stock and cook at least 10 minutes or up to 20 minutes. |
5. Taste and adjust flavour with worcestershire sauce - add small amounts at a time tasting as you go. |
6. Add cheese and French bread to bowl and fill with soup. |
