1. In a saucepan, melt butter or margarine. Add sliced onions and cook over low heat stirring occasionally until caramelized, 30 minutes or more.
2. Add red wine and simmer until the wine is gone and onions drying out. 5 - 10 minutes. A small amount of Brandy can also be used, but I would not use both brandy and red wine - if using brandy add it at the time adding Worcestershire sauce..
3. Sprinkle the flower over onions and cook briefly. 5 minutes.
4. Add the beef stock and cook at least 10 minutes or up to 20 minutes.
5. Taste and adjust flavour with worcestershire sauce - add small amounts at a time tasting as you go.
6. Add cheese and French bread to bowl and fill with soup.
