Nutrient-rich quinoa and yam combine in this soup flavoured with curry and ginger.

Directions

1. Place the oil in a pot set over medium heat. Add the onion, ginger and garlic, and cook 2 minutes.
2. Mix in the curry powder and cook 30 seconds more.
3. Add the stock, quinoa, tomatoes and sugar, and bring to a simmer. Simmer 5 minutes, and then add the yam. Simmer 10 to 13 minutes more, or until the quinoa and yams are tender.
4. Season with salt, stir in the cilantro or green onion, and then serve.

Notes

Note: Quinoa is sold in health food stores, bulk food stores and the bulk foods section of some supermarkets.
