[Curried Quinoa and Yam Soup]

Nutrient-rich quinoa and yam combine in this soup flavoured with curry and ginger.
Ingredients
- 2 tablespoons vegetable oil
- ½ medium onion, finely chopped 2 tsp finely chopped fresh ginger 1 garlic clove, minced
- 1 teaspoon mild or medium curry powder
- 4 ½ cups chicken or vegetable stock 1/3 cup quinoa
- 1 (14-oz.) can diced tomatoes
- 1 tablespoon brown sugar 1 medium yam (about 275 grams), peeled and cut into 1/2-inch cubes salt to taste
- ¼ cup chopped fresh cilantro or sliced green onion
Directions
1. Place the oil in a pot set over medium heat. Add the onion, ginger and garlic, and cook 2 minutes. |
2. Mix in the curry powder and cook 30 seconds more. |
3. Add the stock, quinoa, tomatoes and sugar, and bring to a simmer. Simmer 5 minutes, and then add the yam. Simmer 10 to 13 minutes more, or until the quinoa and yams are tender. |
4. Season with salt, stir in the cilantro or green onion, and then serve. |

Notes
Note: Quinoa is sold in health food stores, bulk food stores and the bulk foods section of some supermarkets.
