1. Sauté:
2. 2 Tbsp. sesame oil
3. 2 minced garlic greens
4. 1 thumb size piece of ginger minced (grated)
5. Add to the stir-fry:
6. 1 medium onion chopped into large pieces
7. 1 or 2 medium carrots in rounds
8. Cook covered 5 minutes
9. Then add and stir in:
10. 1 bunch bok choy sliced crosswise
11. 1 red pepper, large dice
12. 1/2 cup roasted cashews
13. chopped spinach greens
14. 1 Tbsp. tamari
15. Cook covered for 5 more minutes.
