[Cashew Vegetables]

Ingredients
- 2 Tbsp. sesame oil
- 2 minced garlic greens
- 1 thumb size piece of ginger minced (grated)
- 1 medium onion chopped into large pieces
- 1 or 2 medium carrots in rounds
- 1 bunch bok choy sliced crosswise
- 1 red pepper, large dice
- ½ cup roasted cashews
- chopped spinach greens
- 1 Tbsp. tamari
Directions
1. Sauté: |
2. 2 Tbsp. sesame oil |
3. 2 minced garlic greens |
4. 1 thumb size piece of ginger minced (grated) |
5. Add to the stir-fry: |
6. 1 medium onion chopped into large pieces |
7. 1 or 2 medium carrots in rounds |
8. Cook covered 5 minutes |
9. Then add and stir in: |
10. 1 bunch bok choy sliced crosswise |
11. 1 red pepper, large dice |
12. 1/2 cup roasted cashews |
13. chopped spinach greens |
14. 1 Tbsp. tamari |
15. Cook covered for 5 more minutes. |
