[Buttermilk-mashed Yukon Gold Potatoes]

Ingredients
- 2 ½ lbs. Yukon gold potatoes peeled and quartered
- 1-½ cup buttermilk (depending on how creamy you like it)
- 2 tablespoons butter
- ¼ cup chopped green onions (optional)
- salt and pepper to taste
Directions
1. Method |
2. Boil potatoes in lightly salted water until tender. Drain, return to pot and mash well. Whip in remaining ingredients until well combined and the colour of the potatoes lightens. Serve immediately. |
